This is where coffee comes from. Ethiopia's Sidama region sits at over 2,000 metres in the country's southern highlands — the same land where coffee grew wild before anyone thought to cultivate it. The farms here are small, many less than a few acres, worked by families who have been growing coffee the same way for generations. This lot is natural process, meaning the coffee cherry is dried whole on raised beds under the sun for up to four weeks before the seed is removed. That slow fermentation is where the flavour comes from — no added ingredients, no intervention. Just time, altitude, and good land. In the cup: fruity and caramel up front, with milk chocolate in the finish.
